Yam Patties

3 cups of any yam, cooked and mashed (substitute with potato, taro, manioc, tapioca, etc)

1 beaten egg

2 teaspoons grated onion

2 teaspoons chopped parsley

plain flour
-
salt and pepper to taste

cooking oil for frying
Mixed the mashed yam with egg, onion, parsley, salt and pepper and form a flat circular patty.
Roll the patty in flour and fry in hot oil till golden brown.
